Ingredients

  • 1 lb. ground beef
  • 1 Tbsp. flour
  • 2 tsp. salt
  • 1/2 medium green pepper (1/2 c.)
  • 1 small onion (1/4 c.)
  • 2 Tbsp. snipped parsley
  • 1/4 tsp. pepper
  • 1/8 tsp. red pepper sauce
  • 1 clove garlic
  • 1 bay leaf
  • dash of ground thyme
  • 1 1/2 c. water
  • 1 can (8 oz.) whole tomatoes
  • 1 1/2 c. uncooked rice

Method

  • Cook and stir ground beef in 10-inch skillet until brown; drain.
  • Sprinkle beef with flour and salt.
  • Stir in green pepper, onion, parsley, pepper, pepper sauce, garlic, bay leaf and thyme. Cook over low heat until onion is tender.
  • Stir water and tomatoes (with liquid) into beef, break up tomatoes with fork.
  • Heat to boiling.
  • Reduce heat, cover and simmer 5 minutes.
  • Add rice, remove from heat.
  • Cover and let stand 5 minutes.
