Ingredients

  • 1.5 kg beef fillet, trimmed (2 x 750g pieces) Safeway 1 lb For $5.99 thru 02/09
  • salt and freshly ground black pepper
  • Olive oil spray
  • 4 anchovies, rinsed and finely chopped
  • 3 cloves garlic, crushed
  • 2/3 cup parsley leaves
  • 2/3 cup basil leaves
  • 8 large pitted green olives
  • 2 tablespoons baby capers
  • 3 roughly chopped gherkins
  • 1 cup KRAFT Creamy Egg Mayonnaise with Omega 3
  • 250 ml PHILADELPHIA Original Cream For Cooking, low fat cream alternative
  • Roasted or chargrilled vegetables, to serve

Method

  • SEASON the beef well with salt and pepper.
  • Spray a non stick frying pan with oil and brown the beef well on all sides.
  • Transfer to a baking dish and bake in a hot oven 200C for 30-40 minutes or until cooked to your liking.
  • Wrap in a double thickness of foil and rest for 10 minutes.
  • COMBINE in a food processor the anchovies, garlic, herbs, olives, capers gherkin, mayonnaise and PHILLY and process until smooth.
  • SLICE the beef thinly and place onto serving plates with a selection of roasted or chargrilled vegetables.
  • Spoon over a little Creamy Salsa Verde and serve immediately.
  • HANDY TIP: The beef is also delicious served cold with chilled Creamy Salsa Verde if preferred.
  • You may also choose to heat the Creamy Salsa Verde very gently to serve warm.
