Ingredients

  • 4 to 5 lb. beef round or chuck
  • 3 slices bacon
  • 1/4 c. flour seasoned with salt and pepper
  • 1/4 c. vegetable oil
  • 2 c. water
  • 1/2 c. sliced onions
  • 6 small carrots cut in 2-inch lengths
  • 1 1/2 c. diced potatoes
  • 1 1/2 c. peas

Method

  • Rub meat, to coat, with bacon.
  • Then coat on all sides with seasoned flour.
  • Heat oil in a heavy skillet or Dutch oven; brown the meat on all sides.
  • Add 1 cup of water and onions, cover and simmer 3 to 4 hours until meat is tender.
  • Add more water during cooking as necessary.
  • Add the carrots, potatoes and peas about 20 minutes before the meat is done.
  • Put meat on platter.
  • Arrange vegetables around it.
  • Cover with brown gravy.
