Ingredients
- 4 to 5 lb. beef round or chuck
- 3 slices bacon
- 1/4 c. flour seasoned with salt and pepper
- 1/4 c. vegetable oil
- 2 c. water
- 1/2 c. sliced onions
- 6 small carrots cut in 2-inch lengths
- 1 1/2 c. diced potatoes
- 1 1/2 c. peas
Method
- Rub meat, to coat, with bacon.
- Then coat on all sides with seasoned flour.
- Heat oil in a heavy skillet or Dutch oven; brown the meat on all sides.
- Add 1 cup of water and onions, cover and simmer 3 to 4 hours until meat is tender.
- Add more water during cooking as necessary.
- Add the carrots, potatoes and peas about 20 minutes before the meat is done.
- Put meat on platter.
- Arrange vegetables around it.
- Cover with brown gravy.
