Ingredients
- 3 c. soybean oil
- 2 lb. fresh cod fillets
- 1 1/3 c. flour
- 1 c. water
- 1 egg
- 2 tsp. sugar
- 2 tsp. salt
Method
- Heat oil in deep pan to about 400°.
- Cut fish into 7 x 2-inch wedges.
- With mixer, blend flour, water, egg, sugar and salt.
- Dip fish into batter, coating well.
- Quickly drop into oil.
- Fry each fillet until dark golden brown, about 5 minutes.
- Drain on metal rack or paper towels.
