Ingredients
- 2 cups fresh basil, packed
- 13 cup pine nuts
- 3 -4 garlic cloves
- 12 cup olive oil, extra virgin
- 12 cup parmesan cheese, fresh grated
- 1 pinch sugar (optional)
- 14 lemon wedge, seeded
- kosher salt and pepper, to taste
Method
- Place basil, pine nuts and garlic in food processor and pulse a few times until chopped.
- While processor is running, stream in olive oil until mixture turns light green and smooth.
- Add parmesan and process.
- Add salt and pepper to taste.
- Squeeze lemon juice into pesto and if you are adding pinch of sugar do so now.
- Process until you reach desired consistency.
- The longer you process, the smoother it gets.
- If you want it to have texture, process less.
