Ingredients
- 3/4 c. sugar
- 1/3 c. flour
- 1/4 tsp. salt
- 2 c. milk
- 3 egg yolks
- 2 Tbsp. margarine
- 1 tsp. vanilla
- 1 c. flaked coconut
Method
- Combine sugar, flour and salt; gradually add milk.
- Cook and stir until mixture thickens. Cook 2 minutes longer.
- Remove from heat.
- Stir small amount hot mixture into beaten egg yolks, return to hot mixture.
- Cook 2 more minutes, stirring constantly. Remove from heat, add butter, vanilla and coconut.
- Cool and pour into a 9-inch baked pastry shell.
- Add meringue and sprinkle with coconut.
- Brown in hot oven (350°).
