Ingredients

  • 3/4 c. sugar
  • 1/3 c. flour
  • 1/4 tsp. salt
  • 2 c. milk
  • 3 egg yolks
  • 2 Tbsp. margarine
  • 1 tsp. vanilla
  • 1 c. flaked coconut

Method

  • Combine sugar, flour and salt; gradually add milk.
  • Cook and stir until mixture thickens. Cook 2 minutes longer.
  • Remove from heat.
  • Stir small amount hot mixture into beaten egg yolks, return to hot mixture.
  • Cook 2 more minutes, stirring constantly. Remove from heat, add butter, vanilla and coconut.
  • Cool and pour into a 9-inch baked pastry shell.
  • Add meringue and sprinkle with coconut.
  • Brown in hot oven (350°).
