Ingredients

  • 1 medium tomato, chopped
  • 1/4 medium red onion, chopped
  • 1 peeled garlic clove, chopped
  • 1 tsp. dried basil leaves
  • 3 Tbsp. balsamic vinegar
  • 1 tsp. granulated sugar
  • 2 tsp. extra virgin olive oil
  • 1 Tbsp.
  • 1 cup black beans cooked or canned without added salt
  • 1 cup chopped romaine lettuce
  • 1 kiwi
  • 8 fl oz (1 cup) fat-free milk

Method

  • Mix tomatoes, onions and garlic.
  • Blend basil, vinegar, sugar and olive oil in small bowl.
  • Mix the flaxseed into the olive oil mixture.
  • Season as desired with your favorite salt-free seasoning.
  • Pour over vegetables; toss.
  • Stir black beans into mixture.
  • To build salad, place black bean mixture over lettuce.
  • Enjoy a kiwi with the salad.
  • Serve a glass of milk with the meal.
