Ingredients

  • 2 c. corn meal (self-rising)
  • 1/2 c. self-rising flour
  • 2 eggs
  • 1 ham bone with some ham left on it

Method

  • Boil ham bone in large pot with salt and pepper and crushed red pepper to your taste.
  • Take about 1 cup broth.
  • Cool.
  • Mix with meal, flour and eggs.
  • Add only enough broth to make a stiff batter.
  • Wet hands and make small cakes from batter.
  • Drop into boiling broth.
  • Cook 10 minutes uncovered and cover on low heat for 25 minutes.
