Ingredients
- 2 c. corn meal (self-rising)
- 1/2 c. self-rising flour
- 2 eggs
- 1 ham bone with some ham left on it
Method
- Boil ham bone in large pot with salt and pepper and crushed red pepper to your taste.
- Take about 1 cup broth.
- Cool.
- Mix with meal, flour and eggs.
- Add only enough broth to make a stiff batter.
- Wet hands and make small cakes from batter.
- Drop into boiling broth.
- Cook 10 minutes uncovered and cover on low heat for 25 minutes.
