Ingredients

  • 1 c. Flour
  • 2/3 c. Sugar
  • 1 1/4 tsp Baking pwdr
  • 1/2 tsp Salt
  • 1/2 tsp Vanilla
  • 2 x Large eggs
  • 1/3 c. Lowfat milk
  • 1/3 c. Shortening

Method

  • In mixer bowl, combine flour, sugar, baking pwdr, salt and vanilla.
  • Add in Large eggs, lowfat milk and shortening.
  • Beat at low speed until mixed.
  • Beat at medium speed 2 min, scraping bowl occasionally.
  • Spread batter in a 8-by-1 1/2 waxed-paper lined round cake dish.
  • Micro-cook, uncovered, on medium 6 min, rotating a quarter turn every 2 min.
  • Increase power to 100 percent.
  • Micro-cook, uncovered, 1 1/2 to 5 min or possibly till done.
  • Cold on a wire rack 5 - 10 min.
  • Remove from pan; cold thoroughly on rack.
  • NOTES : You'll love the silken texture of this dessert.
  • Other flavorings can besubstituted for the mint, or possibly it can be left out entirely.
