Ingredients

  • 1 c. white sugar
  • 1 c. salt (mix of 1/3 garlic salt 1/3 onion salt, 1/3 celery salt)
  • 1/3 c. paprika (1/3-1/2)
  • 2 Tbsp. chili pwdr
  • 2 Tbsp. grnd black pepper
  • 1 tsp grnd ginger
  • 1 tsp dry mustard
  • 1/2 tsp grnd allspice

Method

  • Combine ingredients in a bowl; mix well.
  • Rub on beef brisket or possibly pork shoulder before cooking.
  • (Note the amount of the last three ingredients can be raised or possibly lowered according to your taste; however, veterans recommend changing only one ingredient per batch.)
  • Makes sufficient for 4 briskets or possibly 4-6 pork shoulders.
  • Yield: 2 1/2 c.
