Ingredients

  • 50 grams Butter
  • 45 grams Sugar
  • 1 Egg
  • 80 grams Cake flour
  • 15 grams Cocoa (Van Houten pure cocoa)
  • 1 tsp Baking powder
  • 1 tbsp Milk
  • 1 Vanilla extract (optional)

Method

  • Mix the room temperature butter and sugar together with a whisk.
  • It will have a cream-like consistency.
  • Add the beaten egg in three batches and mix well.
  • Add milk.
  • If you are adding vanilla extract, do so here.
  • Combine and sift the ingredients marked .
  • Add to the bowl from Step 2.
  • Mix well with a rubber spatula and pour the batter into muffin cups.
  • Smooth out the surface with a spoon.
  • Bake for 15-20 minutes in an oven preheated to 180C.
  • When a skewer poked through the middle comes out clean, they're done.
