- 1 1/4 c. oat bran or pulverized uncooked rolled oats
- 1 c. brown sugar
- 1/2 c. all-purpose flour
- 2 tsp. baking powder
- 2 tsp. ground cinnamon
- 1/2 tsp. baking soda
- 1/2 tsp. ground nutmeg
- 1/2 c. buttermilk
- 1/2 c. vegetable oil
- 1/2 c. mashed ripe banana (1 medium)
- 1 whole egg or 2 egg whites
- 1 c. chopped dates
- cinnamon sugar (optional)
Method
- In large bowl, combine the oat bran or the pulverized rolled oats, flour, brown sugar, baking powder, cinnamon, soda and nutmeg until smooth.
- In another bowl, combine the buttermilk, oil, mashed banana and egg.
- Stir the liquid ingredients into the dry ingredients all at once, stirring just until dry ingredients are moistened.
- Fold in the dates.
- Grease 12 large muffin cups generously.
- Spoon muffin batter into the cups.
- Bake at 375° for about 18 minutes or until a toothpick inserted in the center comes out clean.
