Ingredients

  • 1 1/4 c. oat bran or pulverized uncooked rolled oats
  • 1 c. brown sugar
  • 1/2 c. all-purpose flour
  • 2 tsp. baking powder
  • 2 tsp. ground cinnamon
  • 1/2 tsp. baking soda
  • 1/2 tsp. ground nutmeg
  • 1/2 c. buttermilk
  • 1/2 c. vegetable oil
  • 1/2 c. mashed ripe banana (1 medium)
  • 1 whole egg or 2 egg whites
  • 1 c. chopped dates
  • cinnamon sugar (optional)

Method

  • In large bowl, combine the oat bran or the pulverized rolled oats, flour, brown sugar, baking powder, cinnamon, soda and nutmeg until smooth.
  • In another bowl, combine the buttermilk, oil, mashed banana and egg.
  • Stir the liquid ingredients into the dry ingredients all at once, stirring just until dry ingredients are moistened.
  • Fold in the dates.
  • Grease 12 large muffin cups generously.
  • Spoon muffin batter into the cups.
  • Bake at 375° for about 18 minutes or until a toothpick inserted in the center comes out clean.
