Ingredients

  • 1/3 c. each: Pinto beans, red beans, lentils, split peas, and black eyed peas
  • 6 c. fresh water
  • 1 (24 ounce.) can V-8 juice
  • Garlic pwdr
  • Instead of Salt (Health Valley)
  • 1 minced onion
  • 1/2 c. pearled barley
  • Any favorite vegetables

Method

  • Soak beans overnight, covering with 2 inches of water.
  • Drain off and rinse next morning.
  • Simmer in a large pot soaked beans, water, V-8 juice, garlic pwdr, and Instead of Salt.
  • Simmer, covered, over a very low heat for 6 hrs, then add in onion and barley.
  • Simmer 45 min, then add in any vegetables.
  • Simmer 30 more min.
  • Serves 10.
