Ingredients
- 1 1/2 cups self-raising flour
- 1/2 cup soy flour
- 1/2 teaspoon ground cinnamon
- 3/4 cup caster sugar
- 1/2 cup canola oil
- 2 teaspoons egg substitute (or use 2 egg whites if preferred)
- 30 ml water
- 2 ripe medium bananas
- 1/2 cup Sanitarium So Good® Soy Drink
- 1/2 cup Sanitarium® Walnut Pieces
- 1/2 cup Sanitarium® Dates, chopped
Method
1. Preheat the oven to moderate 180°C (350°F/Gas 4). Lightly grease a 22 × 11 × 6 cm loaf tin with canola cooking spray.
2. Place the flours, cinnamon, sugar, oil, egg substitute, water, bananas and So Good® in a food processor and blend until smooth.
3. Fold the walnut pieces and dates into the mixture and pour into the prepared loaf tin. Bake for 1 hour, or until a skewer comes out clean when inserted in the centre. Allow to cool slightly in the tin before turning out onto a wire rack. Serve warm with honey and tofu cream cheese.
