Ingredients

  • 2/3 c. sugar
  • 1/3 c. cornstarch
  • 1/2 tsp. salt
  • 3 c. milk
  • 2 eggs
  • 3 Tbsp. butter or margarine
  • 2 Tbsp. vanilla
  • 2 c. vanilla wafers
  • 2 c. sliced ripe bananas

Method

  • Heat oven to 350°.
  • Combine sugar, cornstarch, salt and milk in a large saucepan.
  • Cook and stir on medium heat until thickened. Beat eggs lightly with wire whisk.
  • Add a little hot mixture to eggs and blend well.
  • Pour eggs into mixture in saucepan.
  • Continue cooking for a few minutes, stirring constantly.
  • Add butter and vanilla.
  • Blend mixture well.
  • Cover pudding.
  • Cool slightly. Place layer of vanilla wafers on bottom of casserole dish. Alternate with layers of banana slices and pudding, ending with pudding on top.
  • Put dish in the center of preheated oven of 350°. Bake for 10 minutes.
