Ingredients
- 2/3 c. sugar
- 1/3 c. cornstarch
- 1/2 tsp. salt
- 3 c. milk
- 2 eggs
- 3 Tbsp. butter or margarine
- 2 Tbsp. vanilla
- 2 c. vanilla wafers
- 2 c. sliced ripe bananas
Method
- Heat oven to 350°.
- Combine sugar, cornstarch, salt and milk in a large saucepan.
- Cook and stir on medium heat until thickened. Beat eggs lightly with wire whisk.
- Add a little hot mixture to eggs and blend well.
- Pour eggs into mixture in saucepan.
- Continue cooking for a few minutes, stirring constantly.
- Add butter and vanilla.
- Blend mixture well.
- Cover pudding.
- Cool slightly. Place layer of vanilla wafers on bottom of casserole dish. Alternate with layers of banana slices and pudding, ending with pudding on top.
- Put dish in the center of preheated oven of 350°. Bake for 10 minutes.
