Ingredients
- 3/4 c. sugar
- 3 Tbsp. flour
- dash of salt
- 4 eggs
- 2 c. milk
- 1/2 tsp. vanilla
- vanilla wafers
- 5 to 6 ripe bananas, sliced
Method
- Combine 1/2 cup of the sugar, flour and salt in top of double boiler.
- Add one whole egg and 3 yolks (whites for meringue). Stir in milk.
- Cook, uncovered, stirring constantly, until thickened.
- Remove from heat and add vanilla.
- Layer mixture and wafers and banana slices in 1 1/2-quart casserole, ending with custard.
- Beat whites with remaining sugar until stiff peaks. Pile on top of pudding surface.
- Bake at 425° for 5 minutes or until browned.
