Ingredients

  • 3/4 c. sugar
  • 3 Tbsp. flour
  • dash of salt
  • 4 eggs
  • 2 c. milk
  • 1/2 tsp. vanilla
  • vanilla wafers
  • 5 to 6 ripe bananas, sliced

Method

  • Combine 1/2 cup of the sugar, flour and salt in top of double boiler.
  • Add one whole egg and 3 yolks (whites for meringue). Stir in milk.
  • Cook, uncovered, stirring constantly, until thickened.
  • Remove from heat and add vanilla.
  • Layer mixture and wafers and banana slices in 1 1/2-quart casserole, ending with custard.
  • Beat whites with remaining sugar until stiff peaks. Pile on top of pudding surface.
  • Bake at 425° for 5 minutes or until browned.
