Ingredients
- 3 c. sifted flour
- 1 tsp. soda
- 1 tsp. salt
- 1 Tbsp. cinnamon
- 2 c. sugar
- 4 eggs, beaten
- 1 1/4 c. oil
- 1 1/4 c. chopped pecans
- 2 c. frozen strawberries, thawed and sliced
Method
- Combine flour, soda, salt, cinnamon and sugar; mix well.
- In separate bowl, combine eggs, oil, pecans and strawberries; mix well.
- Make well in center of dry ingredients.
- Add liquid mixture, stirring just enough to moisten dry ingredients.
- Pour into 6 greased and floured 6 x 3 x 2-inch foil pans.
- Bake at 350° for 40 minutes for foil pans or 1 hour for larger pans.
- Remove from oven and let cool 5 minutes before removing from pans. Finish cooling on racks.
