Ingredients

  • 3 c. sifted flour
  • 1 tsp. soda
  • 1 tsp. salt
  • 1 Tbsp. cinnamon
  • 2 c. sugar
  • 4 eggs, beaten
  • 1 1/4 c. oil
  • 1 1/4 c. chopped pecans
  • 2 c. frozen strawberries, thawed and sliced

Method

  • Combine flour, soda, salt, cinnamon and sugar; mix well.
  • In separate bowl, combine eggs, oil, pecans and strawberries; mix well.
  • Make well in center of dry ingredients.
  • Add liquid mixture, stirring just enough to moisten dry ingredients.
  • Pour into 6 greased and floured 6 x 3 x 2-inch foil pans.
  • Bake at 350° for 40 minutes for foil pans or 1 hour for larger pans.
  • Remove from oven and let cool 5 minutes before removing from pans. Finish cooling on racks.
