Ingredients

  • 2 1/2 cups flour, all-purpose
  • 3/4 cup wheat germ
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt (optional)
  • 3/4 cup raisins, seedless or chopped dried figs
  • 1 each eggs
  • 2 each egg whites
  • 13 cup vegetable oil
  • 1 cup bananas mashed ripe
  • 3/4 cup orange juice
  • 2 teaspoons orange zest grated
  • 1 teaspoon vanilla extract

Method

  • Heat oven to 350?F.
  • Spray 9 x 5-inch loaf pan with non-stick cooking spray.
  • In a large bowl combine dry ingredients, mixing well; add to dry ingredients.
  • Mix just until moistened.
  • Pour into prepared pan.
  • Bake 60 to 70 minutes or until wooden pick inserted in the center comes out clean.
  • Cool 10 minutes; remove from pan.
  • Cool completely.
