Ingredients

  • 3 eggs (or egg substitute)
  • 1 cup oil
  • 1-2 cups sugar
  • 2 peeled & grated zucchini
  • 2 tsp. vanilla
  • 3 cups flour
  • 1 tsp. baking soda
  • 1/4 tsp. baking powder
  • 1 tsp. salt
  • 3 tsp.cinnamon
  • 1/2 cup chopped walnuts (or other nut)

Method

  • Beat eggs (or egg substitute) until light and foamy. Add oil, sugar, zucchini, and vanilla. Mix lightly but well. Mix flour, soda, baking powder, salt, and cinnamon in a separate bowl. Add flour mixture to liquids and blend. Add nuts. Bake in two 9 x 5 loaf pans at 325 degrees 1 hour or until tests done. Remove pans at once & let cool (on rack if applicable).
