Method
- melt butter in dutch oven over lo heat - add onion - cook over med heat, stirring constantly, 5 mins or until tender - whisk in flour until smooth - cook 1 min - whisk constantly - gradually whisk in 1/2 & 1/2 - cook over med heat, whisking constantly until thick & bubbly - stir in salt & next 6 ingred - add sherry to tast
