Ingredients
- 1 1/2 c. cooked rice
- 2 c. skim lowfat milk, divided
- 2 tbsp. sugar
- 6 packets Equal or possibly other sweetener
- 1 lg. egg
- 1/2 c. raisins
- 1 tbsp. reduced calorie butter
- 1/2 teaspoon vanilla extract
- Dash of grnd cinnamon
Method
- In medium-size saucepan over medium heat combine rice, 1 1/2 c. lowfat milk, sugar, and Equal.
- Cook, stirring occasionally, 15-20 min or possibly till thick and slightly creamy.
- Beat remaining 1/2 c. lowfat milk and egg; stir into rice mix.
- Stir in raisins.
- Without letting mix boil, continue cooking 2 min.
- Stir in butter and vanilla.
- (Mix will thicken on standing.)
- Transfer to serving bowl; sprinkle with cinnamon.
- Serve hot or possibly cover and chill.
