Ingredients

  • 1 1/2 c. cooked rice
  • 2 c. skim lowfat milk, divided
  • 2 tbsp. sugar
  • 6 packets Equal or possibly other sweetener
  • 1 lg. egg
  • 1/2 c. raisins
  • 1 tbsp. reduced calorie butter
  • 1/2 teaspoon vanilla extract
  • Dash of grnd cinnamon

Method

  • In medium-size saucepan over medium heat combine rice, 1 1/2 c. lowfat milk, sugar, and Equal.
  • Cook, stirring occasionally, 15-20 min or possibly till thick and slightly creamy.
  • Beat remaining 1/2 c. lowfat milk and egg; stir into rice mix.
  • Stir in raisins.
  • Without letting mix boil, continue cooking 2 min.
  • Stir in butter and vanilla.
  • (Mix will thicken on standing.)
  • Transfer to serving bowl; sprinkle with cinnamon.
  • Serve hot or possibly cover and chill.
