Ingredients

  • 1 1/2 c. sugar
  • 3/4 c. shortening
  • 2 eggs
  • 3 ripe bananas, mashed
  • 2 c. flour
  • 1 tsp. soda
  • 4 Tbsp. milk
  • 1 tsp. vanilla
  • 7 Tbsp. margarine, melted
  • 5 Tbsp. brown sugar
  • 1 c. coconut or 1 c. raisins
  • 1 c. chopped nuts

Method

  • Cream well the sugar and shortening.
  • Add eggs and bananas. Add, sifted together, the flour and soda.
  • Add milk and vanilla. Pour into greased and floured 13 x 9 x 2-inch pan and spread with topping of melted margarine, brown sugar, coconut or raisins and chopped nuts.
  • Bake at 350° for 30 to 40 minutes.
