Ingredients

  • 3/4 cup all-purpose flour
  • 3/4 cup whole-wheat flour
  • 1/4 cup flaxseed meal
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup mashed ripe banana
  • 1/2 cup chopped walnuts
  • 3/4 cup sugar
  • 1/2 cup plain low-fat yogurt
  • 1/4 cup canola oil
  • Cooking spray

Method

  • Preheat oven to 325
  • Lightly spoon flours into dry measuring cups; level with a knife. Combine flours and next 4 ingredients (through baking soda) in a large bowl, stirring with a whisk.
  • Combine banana and next 4 ingredients (through oil) in a small bowl.
  • Add banana mixture to flour mixture, stirring just until moist.
  • Spoon the batter into a 9x5-inch loaf pan coated with cooking spray.Bake at 325 for 1 hour and 15 minutes or until a wooden pick inserted into the center comes out clean.Cool for 10 minutes in pan on a wire rack,then remove from pan. Cool on wire rack.
