- 1 1/4 cups whole wheat flour
- 1/2 cup ground flax seed
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 2 eggs, slightly beaten
- 1 1/2 cups zucchini, grated
- 3/4 cup dried cranberries
- 1/2 cup brown sugar
- 1/3 cup vegetable oil
- 2 tablespoons lemon zest
- 2 tablespoons lemon juice
Method
- Preheat oven to 350.
- Grease 12 cup muffin pan.
- Whisk together flour, flaxseed,baking powder,cinnamon,baking soda and nutmeg.
- In another bowl combine eggs, zucchini, cranberries, sugar,oil,lemon juice and zest.
- Pour egg mixture over oil and stir just until combined.
- Spoon into muffin pan.
- Bake for about 20 minutes or until done.
