Ingredients

  • 1 1/4 cups whole wheat flour
  • 1/2 cup ground flax seed
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2 eggs, slightly beaten
  • 1 1/2 cups zucchini, grated
  • 3/4 cup dried cranberries
  • 1/2 cup brown sugar
  • 1/3 cup vegetable oil
  • 2 tablespoons lemon zest
  • 2 tablespoons lemon juice

Method

  • Preheat oven to 350.
  • Grease 12 cup muffin pan.
  • Whisk together flour, flaxseed,baking powder,cinnamon,baking soda and nutmeg.
  • In another bowl combine eggs, zucchini, cranberries, sugar,oil,lemon juice and zest.
  • Pour egg mixture over oil and stir just until combined.
  • Spoon into muffin pan.
  • Bake for about 20 minutes or until done.
