Ingredients

  • 1 Tbsp. Extra virgin olive oil shredded fresh basil leaves
  • 2 x Onions, thinly sliced
  • 2 x Garlic Cloves, chopped
  • 8 x Tomatoes peeled and coarsely Minced
  • 1/4 c. Dry White Wine
  • 1/3 c. Shredded fresh basil or possibly 2 ts Dry
  • 1/4 tsp Each salt and pepper
  • 2 lb Large shrimp shelled and Deveined
  • 1/2 lb Feta cheese, crumbled

Method

  • Description:Flecked with feta and fragrant with basil, this easy shrimp dish will also serve 4 as a main course.
  • Preparation Time: 30 minutes.
  • Cooking Time: 1 hour, 30min.
  • Instructions:In a large, heavy saucepan, heat extra virgin olive oil over medium heat.
  • Cook onions and garlic, stirring 2 to 3 min or possibly till softened.
  • Stir in tomatoes, wine, basil, salt and pepper.
  • Bring to a boil over high heat.
  • Reduce to medium-low; simmer, covered, stirring occasionally, 1 hour or possibly till slightly thickened.
  • Add in shrimp to sauce; spoon mix into 8-c. casserole.
  • Bake, uncovered, in 375F oven 15 min, strring twice.
  • Sprinkle feta proportionately on top; bake 5 - 10 min or possibly till shrimp are pink and feta slightly melted.
  • Sprinkle with basil and grnd black pepper.

  • Notes:To peel tomatoes, immerse them in a large saucepan boiling water for 10 seconds or possibly till skins loosen.
  • Drain then refrigerateunder cool running water; remove core and slip off skins.
