Ingredients
- 3 pounds Potatoes, Baked & Chilled
- 5 slices Bacon, cooked and crumbled
- 1 cup Sour Cream
- 1 cup Shredded Cheddar Cheese
- 4 Tablespoons Softened Butter
- 3 Tablespoons Fresh Chives, Chopped
- 2 Tablespoons Mayonnaise
- 1 teaspoon Salt
Method
- **I bake my potatoes in the microwave...it's much faster!
- Once the potatoes are well chilled, peel them and cut into cubes.
- Combine all remaining ingredients and toss with the cubed potatoes.
- Season to taste with more salt and/or pepper. Chill until ready to serve.
