Ingredients

  • 3 pounds Potatoes, Baked & Chilled
  • 5 slices Bacon, cooked and crumbled
  • 1 cup Sour Cream
  • 1 cup Shredded Cheddar Cheese
  • 4 Tablespoons Softened Butter
  • 3 Tablespoons Fresh Chives, Chopped
  • 2 Tablespoons Mayonnaise
  • 1 teaspoon Salt

Method

  • **I bake my potatoes in the microwave...it's much faster!
  • Once the potatoes are well chilled, peel them and cut into cubes.
  • Combine all remaining ingredients and toss with the cubed potatoes.
  • Season to taste with more salt and/or pepper. Chill until ready to serve.
