Ingredients

  • 1 Smithfield or any well-cured country ham

Method

  • Soak ham overnight in cold water to cover; scrub well with brush.
  • Place in roasting pan.
  • Add 5 cups water to pan; cover tightly with lid or heavy foil.
  • Place in cold oven.
  • Turn oven on, set at 500°.
  • After temperature is reached (watch oven signal), bake ham for 10 minutes.
  • Turn off heat.
  • Do not open oven.
  • Let stand 3 hours.
  • Heat oven to 500° again; bake 10 minutes.
  • Turn off heat; leave overnight (or about 10 to 12 hours) without opening oven door.
  • Next day, remove ham from roasting pan, remove skin and trim fat to desired thickness.
  • Score fat and place on rack in baking pan.
  • Glaze.
