Ingredients
- 1 Smithfield or any well-cured country ham
Method
- Soak ham overnight in cold water to cover; scrub well with brush.
- Place in roasting pan.
- Add 5 cups water to pan; cover tightly with lid or heavy foil.
- Place in cold oven.
- Turn oven on, set at 500°.
- After temperature is reached (watch oven signal), bake ham for 10 minutes.
- Turn off heat.
- Do not open oven.
- Let stand 3 hours.
- Heat oven to 500° again; bake 10 minutes.
- Turn off heat; leave overnight (or about 10 to 12 hours) without opening oven door.
- Next day, remove ham from roasting pan, remove skin and trim fat to desired thickness.
- Score fat and place on rack in baking pan.
- Glaze.
