- 4 c. diced boned chicken
- 3/4 c. mayonnaise (not salad dressing)
- 1 can chicken soup
- 2 c. chopped celery
- 4 hard-boiled eggs, sliced
- 1 tsp. salt
- 1 tsp. finely minced onion
- 2 Tbsp. lemon juice
- 2 pimientos, cut up
- 1/3 c. chopped almonds
- 1 c. crushed potato chips
- 2/3 c. grated sharp cheese
Method
- Mix the first 10 ingredients.
- Put in a large 1 1/2-quart baking dish.
- Combine potato chips with cheese and almonds; sprinkle on top.
- Chill overnight.
- Bake in 400° oven for 25 to 30 minutes, until very hot.
