Ingredients

  • 4 c. diced boned chicken
  • 3/4 c. mayonnaise (not salad dressing)
  • 1 can chicken soup
  • 2 c. chopped celery
  • 4 hard-boiled eggs, sliced
  • 1 tsp. salt
  • 1 tsp. finely minced onion
  • 2 Tbsp. lemon juice
  • 2 pimientos, cut up
  • 1/3 c. chopped almonds
  • 1 c. crushed potato chips
  • 2/3 c. grated sharp cheese

Method

  • Mix the first 10 ingredients.
  • Put in a large 1 1/2-quart baking dish.
  • Combine potato chips with cheese and almonds; sprinkle on top.
  • Chill overnight.
  • Bake in 400° oven for 25 to 30 minutes, until very hot.
