Ingredients

  • 1 can condensed cream of chicken and broccoli soup
  • 1 1/2 c. water or milk
  • 3/4 c. regular long grain rice, uncooked
  • 4 chicken breast halves
  • salt, pepper and paprika to taste
  • 1 can French fried onion rings, divided

Method

  • In a 2-quart baking dish, combine soup, rice and water or milk.
  • Add about half the onion rings, slightly crumbled.
  • Arrange chicken on top of rice mixture and season with salt, pepper and paprika.
  • Bake at 375° for 1 hour or until chicken is no longer pink and juices run clear.
  • Top with rest of onion rings and return to oven for 10 minutes longer.
  • Can use skim milk.
  • Red pepper may perk up sauce.
  • I baked chicken and rice for 1 hour and when I added the onion rings on top and put back in oven for 10 minutes, I left uncovered.
