Ingredients

  • 1/2 c. grated Parmesan cheese
  • 1 c. fine dry bread crumbs
  • 1/4 c. chopped parsley
  • 1 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 2 1/2 lb. (about) bluefish fillets
  • 1 egg
  • 2 Tbsp. milk
  • 2 Tbsp. margarine
  • vinegar

Method

  • Mix cheese, crumbs, parsley, salt and pepper.
  • Cut fillets into pieces and dip into beaten egg mixed with milk, then roll in dry crumb mixture.
  • Cook in hot margarine only until lightly browned on both sides.
  • Put in shallow baking pan and bake in a preheated 350° oven for 25 minutes.
  • Serve with a little vinegar. (We prefer malt vinegar.)
