Ingredients
- 1/2 c. grated Parmesan cheese
- 1 c. fine dry bread crumbs
- 1/4 c. chopped parsley
- 1 1/2 tsp. salt
- 1/8 tsp. pepper
- 2 1/2 lb. (about) bluefish fillets
- 1 egg
- 2 Tbsp. milk
- 2 Tbsp. margarine
- vinegar
Method
- Mix cheese, crumbs, parsley, salt and pepper.
- Cut fillets into pieces and dip into beaten egg mixed with milk, then roll in dry crumb mixture.
- Cook in hot margarine only until lightly browned on both sides.
- Put in shallow baking pan and bake in a preheated 350° oven for 25 minutes.
- Serve with a little vinegar. (We prefer malt vinegar.)
