Ingredients

  • 1 lb bacon, cut in 1" pcs
  • 1 c. minced onions
  • 3 Tbsp. margarine
  • 1/4 c. flour
  • 1/2 tsp pepper
  • 2 1/2 c. lowfat milk
  • 1/2 c. grated Parmesan cheese
  • 3 c. cooked rice
  • 2 sm zucchini, shredded
  • 1 x (2 1/4 ounce.) can sliced ripe olives, liquid removed Paprika

Method

  • In fry pan cook bacon on medium heat till crisp; drain.
  • In same fry pan, cook onion in margarine on medium heat 5 min; blend in flour and pepper.
  • Gradually add in lowfat milk; cook, stirring till thickened.
  • Stir in cheese, bacon, rice, zucchini and olives.
  • Pour into lightly greased 12"x8" baking pan; sprinkle paprika on top.
  • Bake, covered with foil, at 375 degrees for 20 min.
  • Remove foil, continue baking at 375 degrees for 10 min.
