Ingredients

  • 2 potatoes peeled, quartered, and cut into 2 mm slices
  • 8 tablespoons duck fat
  • 1 clove garlic minced
  • 3 sprigs parsley minced
  • salt and ground black pepper

Method

  • Heat the fat in a skillet and add the potatoes. Cook on high heat until slightly golden and then lower the heat. Cook until tender, stirring ocassioaly. Set aside.
  • Combine the garlic and parsley. Salt and pepper the potatoes and spoon the parsley mixture over them.
  • Cover and set aside for 15 minutes before serving.
