Ingredients
- 2 potatoes peeled, quartered, and cut into 2 mm slices
- 8 tablespoons duck fat
- 1 clove garlic minced
- 3 sprigs parsley minced
- salt and ground black pepper
Method
- Heat the fat in a skillet and add the potatoes. Cook on high heat until slightly golden and then lower the heat. Cook until tender, stirring ocassioaly. Set aside.
- Combine the garlic and parsley. Salt and pepper the potatoes and spoon the parsley mixture over them.
- Cover and set aside for 15 minutes before serving.
