Ingredients
- 4 oz bacon, finely chopped
- 4 1/2 tbsp butter, softened
- 1 None large egg yolk
- 4 oz grated Cheddar cheese
- 3/4 cup all-purpose flour, sifted
Method
- Preheat oven to 400°F. Oil 2-3 baking trays and line with parchment paper.
- Cook bacon in a small frying pan over medium-high heat until browned and crisp. Drain on paper towels and let cool.
- Meanwhile, beat butter, egg yolk, 2 oz cheese and flour until mixture just comes together. Turn out onto a floured work surface and knead until smooth. Cover and chill for 30 mins.
- Roll dough out until 1/8 inch thick. Cut into 40 - 1 1/2 inch rounds and place 1 inch apart on baking trays. Combine remaining cheese and bacon then sprinkle over cookies. Bake for 12 mins, or until lightly browned. Let cool on trays.
