Ingredients

  • 2 lb. diced pork
  • 1 large onion, chopped
  • 1/4 c. olive oil
  • 2 Tbsp. garlic powder or fresh minced garlic
  • 1 doz. roasted and peeled green chiles
  • 1 Tbsp. cumin
  • 1 c. flour
  • 6 to 8 c. chicken broth
  • salt to taste

Method

  • Brown pork in olive oil in a large pot.
  • When pork is brown add the flour and brown it also lightly, but be careful that it doesn't burn.
  • Then add chicken broth, if you like a thick gravy, use less broth, and for thinner use more.
  • Add all the other ingredients and simmer for 30 minutes, stirring often.
  • If you like, you can add cooked pinto beans.
