Ingredients
- 2 lb. diced pork
- 1 large onion, chopped
- 1/4 c. olive oil
- 2 Tbsp. garlic powder or fresh minced garlic
- 1 doz. roasted and peeled green chiles
- 1 Tbsp. cumin
- 1 c. flour
- 6 to 8 c. chicken broth
- salt to taste
Method
- Brown pork in olive oil in a large pot.
- When pork is brown add the flour and brown it also lightly, but be careful that it doesn't burn.
- Then add chicken broth, if you like a thick gravy, use less broth, and for thinner use more.
- Add all the other ingredients and simmer for 30 minutes, stirring often.
- If you like, you can add cooked pinto beans.
