Ingredients
- 2 c. pinto beans
- 1 or 2 pinches oregano
- 1/4 c. sugar
- 4 c. water
- 1 clove garlic, smashed
- salt pork, ham hock or bacon (as desired; pick your size)
- 1 medium size onion, chopped
- 1/4 tsp. baking soda
- 1 (12 oz.) mild green chili salsa (use hot, if desired)
- salt as needed (not much)
Method
- Soak beans with 1 tablespoon baking soda and clean as usual. Cook until beans are firm, not soft.
- Add other ingredients, except the salsa, early in the process of cooking.
- Near the end of the cooking time, you judge, add the entire contents of the salsa. The beans are best if not mushy. Stir often while cooking.
