Ingredients

  • 2 c. pinto beans
  • 1 or 2 pinches oregano
  • 1/4 c. sugar
  • 4 c. water
  • 1 clove garlic, smashed
  • salt pork, ham hock or bacon (as desired; pick your size)
  • 1 medium size onion, chopped
  • 1/4 tsp. baking soda
  • 1 (12 oz.) mild green chili salsa (use hot, if desired)
  • salt as needed (not much)

Method

  • Soak beans with 1 tablespoon baking soda and clean as usual. Cook until beans are firm, not soft.
  • Add other ingredients, except the salsa, early in the process of cooking.
  • Near the end of the cooking time, you judge, add the entire contents of the salsa. The beans are best if not mushy. Stir often while cooking.
