Ingredients

  • 1 (6 oz.) pkg. lime jello
  • 1 envelope plain gelatin
  • 1 c. sour cream
  • 1 c. avocado, mashed
  • lemon juice
  • 1 c. mayonnaise
  • 1 Tbsp. onion, grated
  • 1 cucumber, sliced
  • sprigs of parsley

Method

  • Oil mold.
  • Prepare lime gelatin according to package directions.
  • Dissolve plain gelatin in small amount of cold water; chill until partially set.
  • Blend together the rest of the ingredients, except the cucumber and parsley, then gently mix into the chilled gelatins.
  • Pour into prepared mold.
  • Chill until set. Serve on bed of leaf lettuce and garnish with sliced cucumber and parsley.
