Ingredients
- 1 (6 oz.) pkg. lime jello
- 1 envelope plain gelatin
- 1 c. sour cream
- 1 c. avocado, mashed
- lemon juice
- 1 c. mayonnaise
- 1 Tbsp. onion, grated
- 1 cucumber, sliced
- sprigs of parsley
Method
- Oil mold.
- Prepare lime gelatin according to package directions.
- Dissolve plain gelatin in small amount of cold water; chill until partially set.
- Blend together the rest of the ingredients, except the cucumber and parsley, then gently mix into the chilled gelatins.
- Pour into prepared mold.
- Chill until set. Serve on bed of leaf lettuce and garnish with sliced cucumber and parsley.
