Ingredients
- 1/3 c. red wine vinegar
- 1/4 c. vegetable oil
- 1/4 c. finely chopped yellow onion
- 1/2 small fresh or pickled jalapeno pepper with seeds, fine ly chopped (about 1/2 tsp.)
- 1 clove garlic, minced
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 3 c. cooked or canned black-eyed peas, rinsed and well drained.
Method
- In a medium-size bowl, whisk the vinegar with the oil.
- Stir in the onion, jalapeno pepper, garlic, salt and black pepper until blended.
