Ingredients

  • 2 cups Crushed Saltine Crackers
  • 1 stick Butter
  • 4 whole Eggs, Beaten
  • 2-1/4 cups Swiss Cheese, Shredded
  • 8 slices Bacon (cooked)
  • 2-1/4 cups Half-and-half
  • 2 Tablespoons Red Pepper, Chopped
  • 2 Tablespoons Red Onion, Chopped
  • 1 teaspoon Salt
  • 1/2 teaspoons Pepper
  • 1/2 teaspoons Paprika

Method

  • In a food processor, whiz crackers up until fine crumbs are formed (or place in a gallon Ziploc baggie and use a rolling pin to crush).
  • In a medium saucepan, melt butter over medium heat. Remove from heat and stir in the cracker crumbs. Spread cracker crumbs in the bottom and up the sides of a pie dish to form the crust, pressing firmly.
  • Starting with eggs, combine remaining ingredients in a large mixing bowl and pour into the crust. Use a spoon or spatula to evenly push around the cheese and other fillings. Bake for 30-40 minutes or until a fork inserted in the center of the quiche comes out clean without any eggs sticking to it.
  • Other variations: switch up bacon for cooked crumbled sausage, or ham chunks.
