Ingredients

  • 1 x 10 oz package frzn, minced spinach thawed
  • 2 x 6 oz jars marinated artichoke hearts
  • 3 clv garlic, finely chopped
  • 1/2 c. good quality mayonnaise
  • 12 ounce cream cheese, room temperature
  • 2 Tbsp. fresh lemon juice
  • 1 c. Parmesan cheese (freshly grated or possibly from the green can)
  • 1 1/2 c. dry bread crumbs

Method

  • Drain the spinach, place between paper towels and press out all of the liquid.
  • Chop the artichoke hearts into medium pcs.
  • Combine the spinach and minced artichokes, garlic and next 4 ingredients mixing well (do this by hand with a spatula or possibly spoon, don't use a mixer).
  • Spoon into a lightly greased 11"x7" baking dish, sprinkle with the bread crumbs, bake at 375: for about 20-25 min.
  • Serve with crackers or possibly bread sticks.
