Ingredients

  • 2 14 oz. cans artichokes
  • drained and chopped
  • 2 jars marinated artichokes (reserve liquid from one jar)
  • 1 medium onion chopped
  • 4 cups shredded cheddar cheese
  • 1 1/2 cups flavored bread crumbs
  • 5 tablespoons parsley, minced
  • 1 teaspoon dried oregano
  • salt and pepper

Method

  • Saute chopped onion in reserved liquid until translucent, approximately 7 minutes. In large bowl mix together sauteed onion, artichokes, shredded cheddar cheese, bread crumbs, parsley, oregano, salt and pepper. Spoon into mini muffin tins. Bake at 350 degrees for 18 minutes until bubbly and slightly browning on top. Serve warm. Can be frozen and reheat for 10 minutes in 350 oven.
