Ingredients

  • 1 onion, chopped
  • 2 stalks celery, chopped
  • 1/2 stick margarine, melted
  • 1 (10 oz.) pkg. frozen chopped broccoli
  • 1/4 tsp. chopped oregano (optional)
  • 1 c. rice, cooked (yield should be 2 c. of cooked rice)
  • 1 can cream of chicken soup
  • 1 1/2 c. grated sharp Cheddar cheese
  • 1/4 tsp. black pepper
  • Ritz crackers, crushed (approximately 3/4 roll)
  • 1/2 c. margarine, melted

Method

  • Saute onion and celery in 1/2 stick margarine.
  • Cook broccoli by directions on package.
  • Add oregano.
  • Cook 1 cup rice in salted water.
  • Add rice and broccoli to onion mixture.
  • Add soup, cheese and pepper.
  • Pour in casserole dish.
  • Sprinkle crushed crackers on top.
  • Drizzle with melted butter and bake at 350° for 20 to 30 minutes.
