- 1 onion, chopped
- 2 stalks celery, chopped
- 1/2 stick margarine, melted
- 1 (10 oz.) pkg. frozen chopped broccoli
- 1/4 tsp. chopped oregano (optional)
- 1 c. rice, cooked (yield should be 2 c. of cooked rice)
- 1 can cream of chicken soup
- 1 1/2 c. grated sharp Cheddar cheese
- 1/4 tsp. black pepper
- Ritz crackers, crushed (approximately 3/4 roll)
- 1/2 c. margarine, melted
Method
- Saute onion and celery in 1/2 stick margarine.
- Cook broccoli by directions on package.
- Add oregano.
- Cook 1 cup rice in salted water.
- Add rice and broccoli to onion mixture.
- Add soup, cheese and pepper.
- Pour in casserole dish.
- Sprinkle crushed crackers on top.
- Drizzle with melted butter and bake at 350° for 20 to 30 minutes.
