Ingredients
- 1 (14 oz.) can artichoke hearts, drained and mashed
- 1 c. Italian bread crumbs
- 2 Tbsp. olive oil
- 1 Tbsp. lemon juice
- 2 Tbsp. Romano or Parmesan cheese
- 2 eggs
- 2 cloves garlic, crushed
Method
- Combine all ingredients.
- Roll into small balls.
- Roll in extra cheese using same kind as in balls.
- Heat in a 350° oven for 10 minutes.
- Don't let them get too dry.
- Can make ahead and freeze.
- Makes 40 to 60 balls.
