Ingredients
- 1 1/3 pounds wild mushrooms
- 1 tablespoon vegetable oil
- 1 onion
- 4 1/4 cups chicken broth
- 3 3/8 tablespoons sour cream
- salt
- fresh thyme
Method
- Saute the onion in the oil in a skillet on low heat.
- Add the mushrooms and saute for 5 minutes.
- Add the chicken broth and cook for up to 12 minutes.
- Remove the mushrooms and onions from the broth and add to a food processor. Add a small amount of broth and puree until smooth.
- Add the mixture to a bowl. Add the sour cream and blend thoroughly. Season with pinch of salt and fresh thyme.
