Ingredients

  • 1 1/3 pounds wild mushrooms
  • 1 tablespoon vegetable oil
  • 1 onion
  • 4 1/4 cups chicken broth
  • 3 3/8 tablespoons sour cream
  • salt
  • fresh thyme

Method

  • Saute the onion in the oil in a skillet on low heat.
  • Add the mushrooms and saute for 5 minutes.
  • Add the chicken broth and cook for up to 12 minutes.
  • Remove the mushrooms and onions from the broth and add to a food processor. Add a small amount of broth and puree until smooth.
  • Add the mixture to a bowl. Add the sour cream and blend thoroughly. Season with pinch of salt and fresh thyme.
