Ingredients

  • 1 ready-made chocolate-crumb pie crust
  • 1 env. unflavored gelatin
  • 1/4 c. cold water
  • 2 c. heavy cream, divided
  • 1 c. semi-sweet chocolate chips
  • 2 eggs
  • 1 tsp. vanilla extract
  • 1 c. caramels (about 24)
  • 2 Tbsp. butter

Method

  • Prepare crust as directed.
  • Sprinkle gelatin over water in small saucepan; let stand one minute.
  • Stir over low heat until gelatin is dissolved, about 3 minutes.
  • Stir in one cup of the heavy cream.
  • Heat to a boil.
  • Then pour into a blender.
  • Add the chips and process until the chips are melted, about one minute. When processing, add another 1/2 cup of cream, eggs and vanilla; process until well blended.
  • Pour mixture into large bowl, chill for 15 minutes until thick.
