Ingredients

  • 12 slices white bread
  • 24 None peeled and deveined shrimp
  • 3 None green onions, finely chopped
  • 2 tsp finely grated fresh ginger
  • 1 tbsp chopped cilantro
  • 1 None egg white
  • 1 tsp cornstarch
  • 1 tsp soy sauce
  • 2 tsp sesame oil
  • 1/2 cup sesame seeds
  • 3 cups vegetable oil, to deep-fry
  • None None plum sauce, to serve

Method

  • Using a 2 inch cutter, cut bread into 24 rounds. Using a food processor blitz shrimp, green onions, ginger, cilantro, egg white, cornstarch, soy sauce and sesame oil until almost smooth. Season with salt and white pepper.
  • Place sesame seeds on a plate. Spread one side of each bread piece with prawn mixture. Dip bread, prawn-side down, in seeds to coat.
  • Heat oil in a large heavy-based saucepan (oil is ready when a cube of bread crisps quickly without absorbing oil). Deep-fry, in batches, for 1-2 mins or until golden and cooked through. Using a slotted spoon, transfer to paper towels to drain. Serve with plum sauce.
