Ingredients

  • 1 large broiler-fryer, cut up
  • 1 small can pimentos
  • 1 c. rice
  • 1 pkg. frozen green peas, defrosted
  • 1 c. water
  • a little oil
  • 1 large can whole tomatoes
  • salt and pepper to taste

Method

  • Preheat oven to 350°.
  • Brown chicken in the oil and transfer to an oven casserole.
  • Add tomatoes and their liquid.
  • Add rice. Lower temperature to 325°.
  • Cover and cook for 1 hour.
  • Fluff rice; add the defrosted peas and arrange pimentos on top.
  • Cook, covered, an additional 10 minutes.
  • Serve.
