Ingredients
- 1 large broiler-fryer, cut up
- 1 small can pimentos
- 1 c. rice
- 1 pkg. frozen green peas, defrosted
- 1 c. water
- a little oil
- 1 large can whole tomatoes
- salt and pepper to taste
Method
- Preheat oven to 350°.
- Brown chicken in the oil and transfer to an oven casserole.
- Add tomatoes and their liquid.
- Add rice. Lower temperature to 325°.
- Cover and cook for 1 hour.
- Fluff rice; add the defrosted peas and arrange pimentos on top.
- Cook, covered, an additional 10 minutes.
- Serve.
