Ingredients

  • 4 large potatoes
  • 1 onion
  • 1 garlic clove
  • 1 tbsp tomato paste
  • 1 pinch salt and pepper
  • 750 grams mince meat
  • 1 breadcrumbs
  • 1 parmesan cheese

Method

  • preheat oven to 350F
  • in a large pot fry chopped onion and garlic.
  • add mince meat and fry till brown.
  • add salt and pepper.
  • add the 3 cans diced tomatoes and the tomato paste.
  • cook for about 30 mins on low heat till sauce thickens stirring occasionally.
  • peel potatoes and slice into very thin slices.
  • in a deep rectangle oven dish sprinkle a thin layer of breadcrumbs on bottom then a layer of the tomato sauce.
  • then add a layer of the sliced potatoes.
  • add layer of tomato sauce sprinkle with breadcrumbs add second layer of sliced potatoes, layer of tomato sauce sprinkle breadcrumbs, a third layer of sliced potatoes final layer of tomato sauce with a sprinkle of breadcrumbs and generous amount of parmesan cheese.
  • make sure each layer of sauce covers potatoes well.
  • cover dish with foil and bake for an hour or till potatoes are soft.
  • take out of oven and let it rest for about 15 - 20 mins before serving square size pieces.
  • letting it rest helps the dish stay together layered in a stacked square piece and not fall apart when placing on the plate.
