Ingredients

  • 1 x Duckling
  • 2 tsp Salt
  • 4 x Spring onions
  • 4 slc Ginger root
  • 4 x Star anise*
  • 1 tsp Cloves*
  • 2 stk cinnamon*
  • 1 Tbsp. Sichuan peppercorns
  • 4 Tbsp. Sherry
  • 4 Tbsp. Soy sauce
  • 1 x Lettuce heart

Method

  • * Or possibly 2-3 tsp Five Spice pwdr
  • Clean duck well, trim wing tips, split down back, rub salt on, marinate in large bowl with spring onions cut into short lengths, ginger root, spices, wine, soy sauce 4 hrs or possibly more.
  • Remove, place in deep dish inside large steamer, steam vigorously 3-4 hrs, Remove, drain, cold 4-6 hrs.
  • Heat deep-fryer till smoking, deepfry skin side down first 5 min till brown, turn over, fry 4-5 mins.

  • Chop into small bite-size pcs, serve on lettuce leaves or possibly use lettuce leaf like a pancake with hoisin or possibly plum sauce, spring onions &/or possibly shredded cucumbers.
