Ingredients

  • 2 c. apricot halves, drained and sliced
  • 1 pkg. orange gelatin
  • 1/2 c. orange juice
  • 2 Tbsp. lemon juice
  • 1 (3 oz.) pkg. cream cheese
  • 1 (9 oz.) can pineapple tidbits, drained
  • 1 c. red grapes, halved and seeded
  • 1/2 c. mayonnaise
  • 1/3 c. almonds, toasted and slivered
  • dash of salt

Method

  • Drain juice from apricots and add water to make 1 cup liquid. Heat to boiling; add gelatin and stir until dissolved.
  • Add orange juice, lemon juice and salt.
  • Blend in cream cheese until smooth. Chill until partially congealed.
  • Beat gelatin mixture until fluffy.
  • Fold in fruits, mayonnaise and almonds.
  • Chill until firm.
  • Garnish with sugared grapes.
  • Makes 9 servings.
