- 2 c. apricot halves, drained and sliced
- 1 pkg. orange gelatin
- 1/2 c. orange juice
- 2 Tbsp. lemon juice
- 1 (3 oz.) pkg. cream cheese
- 1 (9 oz.) can pineapple tidbits, drained
- 1 c. red grapes, halved and seeded
- 1/2 c. mayonnaise
- 1/3 c. almonds, toasted and slivered
- dash of salt
Method
- Drain juice from apricots and add water to make 1 cup liquid. Heat to boiling; add gelatin and stir until dissolved.
- Add orange juice, lemon juice and salt.
- Blend in cream cheese until smooth. Chill until partially congealed.
- Beat gelatin mixture until fluffy.
- Fold in fruits, mayonnaise and almonds.
- Chill until firm.
- Garnish with sugared grapes.
- Makes 9 servings.
