Ingredients
- 4 whole green or red peppers
- 1/2 c. olive oil
- 1/4 c. tarragon vinegar
- 2 Tbsp. capers
- 1 clove garlic, crushed
- 1 tsp. dried basil
- 1/2 tsp. salt
- 1/4 tsp. pepper
Method
- Place the whole peppers in shallow pan, 4-inches from heat. Broil 12 to 15 minutes, turning to broil all sides.
- Cool, cut in half, peel off thin skin and remove seeds and hard pulp.
- Cut peppers lengthwise into 1/4-inch strips and place in bowl. Combine all other ingredients in jar and shake.
- Pour over peppers. Serve at room temperature.
