Ingredients

  • 4 whole green or red peppers
  • 1/2 c. olive oil
  • 1/4 c. tarragon vinegar
  • 2 Tbsp. capers
  • 1 clove garlic, crushed
  • 1 tsp. dried basil
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Method

  • Place the whole peppers in shallow pan, 4-inches from heat. Broil 12 to 15 minutes, turning to broil all sides.
  • Cool, cut in half, peel off thin skin and remove seeds and hard pulp.
  • Cut peppers lengthwise into 1/4-inch strips and place in bowl. Combine all other ingredients in jar and shake.
  • Pour over peppers. Serve at room temperature.
